Eggless Breakfast Cake Recipe

Cake is one of my biggest weaknesses and I will travel to the end of town if there is cake – tried and proven! However, in the last year, health has taken precedence over constant junk eating and I have been trying to eat healthier, but my love for cake still continues. I have always loved the concept of eating pizza, noodles etc., (leftovers) for breakfast and I thought to myself, why not have cake for breakfast?

So, here’s a delicious yet sorta healthy breakfast cake recipe that uses oats and bananas that I recently made and quite enjoyed. Keep an open mind when consuming these oats breakfast cakes as it doesn’t have the regular amounts of sugar, flour etc., so the taste will vary – however, I can tell you it is delicious, and you will end up finishing it one go!

This recipe makes 1 medium cup size breakfast cakes each, feel free to alter the measurements accordingly.

Prep Time: 10 mins                 Bake Time: 10-12 mins                       Total Time: 20-25 mins

Ingredients:

For the oats chocolate cake

  • 1/3 cup rolled oats or quick oats
  • ½ tsp baking powder
  • 2 tbsp cocoa powder (unsweetened)
  • 1/3 cup milk
  • 1 tsp honey or maple syrup (vanilla extract can also be added)
  • ½ ripe banana
  • Pinch of salt
  • Chopped nuts (I used almonds) & chocolate chips or chunks as needed for garnish

For the oats vanilla cake

  • 1/3  cup rolled oats or quick oats
  • ½ tsp baking powder
  • ½ ripe banana
  • 1 tbsp sugar
  • 1/3 cup milk
  • 1 tsp vanilla extract
  • Optional: maple syrup, chopped nuts (I used almonds) & chocolate chips or chunks as needed for garnish

Method for Oats Chocolate Cake

  1. In a blender add the rolled oats and cocoa powder and blend until a fine powder
  2. Next we add the  banana, milk, baking powder, salt, and honey or sweetener of your choice and blend until it forms a batter like consistency
  3. Empty half the batter into a ramekin or bowl, add some chocolate chips  and fill in the other half of the batter. Top it off with nuts of your choice

Method for Oats Vanilla Cake

  1. In a blender add the rolled oats, baking powder, banana, sugar, milk, vanilla extract and blend until it forms a batter like consistency
  2. Empty half the batter into a ramekin or bowl, add some chocolate chips (optional for this one) and fill in the other half of the batter. Top it off with chocolate chips and nuts of your choice

Baking instructions for the oats vanilla/chocolate cake:

On the stove in a make-do oven:

  • Preheat the make do oven and place it in low flame for 10-12 mins. Put in a toothpick or knife to see if it’s baked. Once it starts turning into a beautiful golden brown colour, keep an eye out as there is a chance for the sides to be overbaked and not so much in the middle.

In an oven:

  • Preheat the oven and bake it at 180 degrees for 10-12 minutes.

Serving suggestion:

  • Allow the oat breakfast cake to cool down and then enjoy the delicious and super easy sweet treats with a cup of coffee or tea.
